Chicken Pasta with Siracha Cream Sauce

The Eat Healthy for (Busy) People series is my record ( and instructions) of how a insanely busy designer such as myself does not need to sacrifice good eating habits to get tons of stuff done.

These are simple and good-tasting recipes which I totally winged, so you can too!

Meal #2 of Eat Healthy for (Busy) People :

Chicken Pasta with Siracha Cream Sauce

How long ( in reality) : 45 Minutes ( including clean-up)

What it takes:

  • 2 Chicken Breasts(Defrost them some how – Microwave, Leave them in refrigerator, run under cold water.)
  • Frozen Stew Vegetables ( Carrots, Potatoes, Onions, etc.)
  • Rotini ( or some kinda pasta)
  • Milk
  • White Wine
  • Cream Cheese
  • Siracha
  • Salt, Pepper, Garlic Powder

Let’s cook and get back to work!

  1. Get some water boiling. Put the pasta in and let it boil. Mix it every few minutes.
  2. Cut the chicken into cubes. Throw some salt,pepper, garlic on them and toss them a bit in that mixture.
  3. Mix about a spoon of cream cheese, something like a 1/2 cup of milk, and 2 or 3 squirts of Siracha. Mix it with a fork ( whisk or whip it)
  4. Put the frozen vegetables, chicken and Siracha mixture into a saucepan ( ideally with edges so it can hold some liquid.) Cook on medium for 10 to 15 minutes, until its all bubbling and delicious looking. Make sure to mix the stuff around every few minutes.
  5. Once the pasta is soft, strain it in the sink. Throw in a small spoon of butter and mix all up.
  6. Put the pasta on a plate or bowl ( thank you, captain obvious…)
  7. Put the chicken/vegetable/sauce mixture on-top of pasta.
  8. Enjoy.

Now, Do some quick cleaning of dishes( takes me 5 minutes), perhaps grab a chewy bar ( my dessert of choice)

Damn, Feels good. Let’s get back to work.
