I am an extremely busy designer. Up until recently, I was eating a lot of take-out, delivery, various unhealthy ( but fast) meals. I didn’t eat much fast food, fried food or conventionally awful stuff but I found the restaurant made food ( even healthy options) are secretly still bad. I noticed that I was not feeling as awesome and not as hungry to design well. I have attributed this to the reasonably low quality of food. I am on a mission now, to step back , cook my food and still gets tons of design work done.
The Eat Healthy for (Busy) People series is my record ( and instructions) of how a insanely busy designer such as myself does not need to sacrifice good eating habits to get tons of stuff done.
These are simple and good-tasting recipes which I totally winged, so you can too!
So lets get it on.
Meal #1 :
Honey-Wine Baked Chicken with Mustard Broccoli
As a note, we had so many orders from GrubHub, that we had some credit we needed to use by tonight, so that is why you see Salmon Sashimi in the picture…Also, highlights why the ordering of food so much had to stop!
How long ( in reality) : 1 hour ( including clean-up)
What it takes:
- Chicken Breasts(Defrost them some how – Microwave, Leave them in refrigerator, run under hot water.)
- Frozen Broccoli and Spinach
- 2 Eggs
- Honey
- White Wine
- Honey Mustard Dressing
- Olive Oil
- Shallot or Onion of some type ( Chopped up to some small degree)
- Salt, Pepper, Garlic Powder ( Do yourself a favor and just buy 2 or 3 pre-mixed spice concoctions ( Old Bay, Gourmet Burger, Beer-Can Chicken ) they are great and they make seasoning easy.)
Let’s cook and get back to work!
- Turn your oven to 350 Degrees. Get a pot of water boiling. Cover an oven pan in aluminum foil. (That foil is going to make your pan 1000X easier to clean)
- Mix the Honey, White Wine and Olive Oil in a bowl or cup . Use about equal parts, just makes sure its enough to cover your chicken breasts ( I used 3)
- Get the previous honey/oil/wine concoction all up in the chicken’s business until they are covered.
- I used to a bowl but you can just sprinkle it on. Get the Salt, Pepper , Garlic and/or Pre-mixed spice stuff all over the chicken.
- Put the chicken in the oven, set a timer for 45 minutes. Now briefly,forget about the chicken.
- Throw the broccoli and spinach into the boiling water.
- Cut the onion-ish ingredient into slices of sorts. (Smaller is better).
- Mix the onion, about 1/2 a cup of honey mustard dressing( totally didn’t measure), white wine, and salt/pepper/garlic and a drop of honey.
- Grab a new pot, boil up some more water. Hard boil the 2 eggs. I’m no doctor, so here is a link on how to hard boil an egg ( http://www.wikihow.com/Hard-Boil-an-Egg )
- Once the egg is hard boiled, remove it from the shell ( unless you like egg shell in your food…)
- Make sure the broccoli and spinach are all soft and edible ( should have boiled for about 10 to 15 minutes, it doesn’t matter really) Strain it of the water and dump it into a bowl.
- Throw the hard-boiled eggs and mustard dressing into the broccoli and spinach and mix up until its all well…mixed.
- Remember the chicken. Timer should be roughly done now. Take out the chicken ( should be all delicious looking and juicy)
- Put the chicken and mustard broccoli/spinach on a plate.
- Have a nice meal.
Now, Do some quick cleaning of dishes( took me 5 minutes), perhaps grab a chewy bar ( my dessert of choice)
